In the heart of the Aspres, a legend has it that there was, in very ancient times, near the torrent of the "Canterrane" a village of fairies (Encantades) named Mirmanda. This city, invisible to ordinary mortals, was destroyed by a sudden rise in the waters of the Mediterranean. Only a few shepherds would have had the favors of these fairies and would have become very rich. It is in this land of legends that our "Terrassous winegrowers" exploit a fabulous terroir, a place of expression for the great wines of Roussillon. The winegrowers of Aspres cultivate nearly 700 hectares, combining ancestral know-how with modern techniques of vineyard management and winemaking. More than 90% of their vineyard is classified as a Protected Designation of Origin wine. They implement a reasoned culture while respecting the nature that surrounds them. Thus, they reduce treatment as much as possible and favor "soft" farming methods (natural grazing, control by sexual confusion, maintenance of hedges, etc.). On the other hand, the hills of Aspres offer a panorama of fields of olive trees, scrubland, paths lined with cypresses and interspersed with vines. The very complex geology of this place presents a great diversity of soils: red clays, shales, rolled pebbles, it is a real mosaic.
